Where our Cheese is Made
 
Capro goats cheeses are produced in Croatia by Vindija, the leading dairy food company in Croatia with over 45 years food production experience. 
 
The natural whole milk is sourced from Croatian brown alpine goats.  Many consumers are attracted to the more natural farming methods of goats for their milk.
 
Goats milk is unavailable at certain times of year when nanny goats produce kids.  Capro goats cheeses are therefore unavailable during the second half of January, the full months of February and March and the beginning of April excluding Caprodur which has a 5 month shelf life.
 
How our Cheese is Made
 
  • The milk is pasteurised then separated into curds and whey.
  • The curds are then cut or heated in order to release more whey from the curds.
  • The type of additional treatment and levels of whey to be removed depends on the type of cheese being made.
  • The curds are then milled and salted and cultures and flavours are added - again this depends on the type of cheese being made - and then placed in moulds to shape. 
  • The cheese is pressed in the moulds and left to ferment in temperature and humidity controlled rooms.
  • The fermentation period varies by cheese type.

Balanced Diet
Cheese, eaten as part of healthy balanced diet, is a nutritious food full of calcium, protein, vitamins and minerals.  Cheese should be eaten in moderation.
 
Allergy Alleviation
Goats cheese is particularly beneficial to people, especially children, with cows milk intolerance which activates allergies such as asthma and eczema.  Research indicates that certain proteins in cows milk cause these allergic reactions.
 
Digestion Disorders
Goats milk has smaller fat molecules than cows milk which makes it easier to digest than cows milk and can be a vital alternative for suffers of digestive disorders such as irritable bowel syndrome.
 
Total Nutrient Absorption
Goats milk is particularly high in vitamins A and D, has a high level of essential amino acids and a more soluble type of calcium so the goodness of goats milk is fully absorbed by the body.
